American Nut Company, a local business owned by Lisa Robitaille, specializing in Bavarian Glazed Roasted Almonds & Pecans blended with a touch of cinnamon, a splash of vanilla, and a bit of sugar that creates a unique spin on “State Fair” snacks that are different and healthier. Robitaille grew up in a family of business owners and cooks. She started American Nut Company in early 2017, shortly after moving to Columbus. Quarry Trails will be a community among a natural, unmanicured Metro Park. The Metro Park will be the defining feature and amenity for residents and guests of the development. I love when people ask me why I became a coffee roaster, especially if they have the time for the story, because this has been years in the making! Having always dreamed of one day owning a café, especially a tea shop I knew after the birth of our daughter that it was the right time to seize the dream that would ultimately become our family’s legacy. I left the comfort and security of my desk job that I was quite good at, and began to map out a vision for the company I would create. I spent many months just researching, testing, and gaining skills; because in certain ways, even though I had a love for tea and coffee I didn’t yet know about the culture, the community, and the full breath of the industry. Initially I hadn’t imagined that I would be roasting our coffee. I had planned to partner with a roaster who shared my tastes and open a mobile coffee and tea bar. However, once I dove deep in to the passion of coffee I had to try roasting it for myself. I enlisted some expert help in roasting and tasting from an Ohio coffee school, who later bestowed full accreditation from the Specialty Coffee Association. Learning to roast coffee was a big deal for me. Not only did it change who we were as a company, it completely overhauled what I knew and thought about coffee. My typical coffee drink was a latte, rich and creamy, with tons of sugar. The more it tasted like dessert the more I liked it! Now don’t get me wrong I do love flavored lattes, but I didn’t know that coffee has so much flavor on its own. In fact coffee has nearly 4 times as many flavor and aromatic compounds than that of wine. It’s truly an art as I create from a bit of harvested crop a desired taste and aroma, utilizing all the 5 senses as I roast each batch, however I also love all the graphing and instruments which are truly fascinating. Nothing gets me more passionate than talking about the coffee and tea industry. From fancy new gadgets for brewing and testing, to the science and worldwide impact, I love the culture and community. As I move forward I hope to create and add value to the community right here in Ohio. I see our mission as breaking the unbeknownst apathy that surrounds the ritual of second wave coffee. She is a Professor at Case Western Reserve University, where she teaches a graduate level functional nutrition course. She also serves as a nutrition consultant for Hyman Digital. Brigid was one of the founding dietitians at the Cleveland Clinic Center for Functional Medicine, where she worked with over 3,000 patients and trained under Dr. Mark Hyman. Prior to that, Brigid worked at the Cleveland Clinic Wellness Institute for Dr. Michael Roizen. Brigid has a Bachelor’s of Science in Dietetics from Miami University, as well as a Master’s of Science in Public Health Nutrition from Case Western Reserve University. Brigid has completed four years of advanced functional medicine training through the Integrative and Functional Nutrition Academy and the Institute for Functional Medicine.
